Those of you who play Stronghold a lot, what have you found to be a great profession/build at defending the Lord and the gates?

The best defending builds tend to be builds that are high damage with strong AoE and CC utility so that you can take out NPCs fast and shut down anyone trying to heal them.

What tends to have those qualities? Staff Ele?

IMO full support build work well too. Druid and Tempest work well for that followed by Ventari glint rev (whose problem is a lack of condi cleanse).
A note what I said works well in the Lords room since the lord can kill most threats..

trap DH to defend, cele druid to offense and you’re guaranteed a win.

Tempest followed by Druid. Works best if you have a bruiser spec with you to pressure attackers.

What Tempest or Druid attack kills clusters of doorbreakers most quickly?
