Revisions and Extras
Elementalist: Immortal, can only be countered by Stability and ANet patch notes. If you face one better forfeit. The main problems with the strength of its damage without traiting for it or backing it up with utilities (meaning defensive traits and utilities are either too powerful or the offensive utilities are too weak). The ability to still run a damage build while traiting identically to a bunker build means that the overall damage of the class is too high and should be more reliant on offensive traits and utilities.
Mesmers: Look for the real one, it’s not hard. Once you do and break through distortion and blurred frenzy and the staff ability that operates like a stun break you may be able to do damage with them until they go stealth.
Thief: Impossible to counter because stealth is broken. Basilisk Venom needs to properly work to allow dodging after stun break is used, the argument that it is an elite does not bypass the fact that most stun breaks have a longer cooldown than this ability. Basilisk Venom also needs to properly be transferred when using shared anguish.

Guardian: Don’t need to counter them because they’re balanced. In a tank spec they do no damage anyways. If a Guardian specs for damage they retain the majority of their survivability but gain very good damage (just don’t use spirit weapons)
Ranger: They throw traps which are completely OP and have a very low CD. This means that they have no real defensive utilites other than dodges and their condi-removal is usually a 10 second 3 cleanse that the ranger has no control over.
Engineer: 100 nades can almost instant kill any other DPS class and almost does as much as backstab. Although it is impossible to hit on a moving opponent and thus requires much more skill and has a longer cooldown than both 100 blades and backstab.
Necro: They… ummm… REZ SIGNET…

Ranger > Guard (bunker)

Thief (d/p) > War (100b)
Generally:
Ele > condi dmg builds
Burst > light armor/anti condi builds
Guard > burst damage
Ranger > burst damage/anti burst damage builds
Retal > quickness

Mesmer is super ez to counter, find the real one and you just countered him. They instantly implode once they find that their cover has been blown.
