Most difficult/fun proffesion/build
Engi is probably a good idea, its complex and rewarding.
Ele is fun and has a lot of buttons to press, does a lot of different thing, its a bit less complex than engi because it follows established rotations most of the time, but its a lot of fun.
Necro is a bit simpler than both, the meta build is based around managing conditions and boons, sending them, corrupting them, but in the end its more controlish and kill stuff with powerful auto attack in shroud.

warriors are indded the simplest proffesion.
In terms of you need to click a lot and fast, engieneer is top, ele also close. Currently ele dd build is also more forgiving, so soldier/marauder engie should be most fun. Lots of different combo fields potential.
Honorable mention goes to necro and mesmer. Mesmer is strong but it is very very hard to pick up, you have a lot of good defensive cooldowns but u also have to use pretty perfectly to be effective.
Necro on contrary is easier to pick up,due to more natural defense, but is slow and has worse or sometimes no escape options, so you need to always watch and think a step ahead with your positioning. Im a necro main but a lot of my guildmates who tried necro as alt had tons of fun with it, even with its wel known problems.
If you want unique, try mesmer or necros deathshroud, if not, i think engie is more fun than ele.

Difficulty is not only a matter of button to smash.
It is also related to timing required…anticipation…good understanding of what the opponent is doing. In these aspects… I don’t feel ele and engineer are the most requiring professions.
Try mes or thief.
Fresh Air is difficult and really fun to play (it was more pre-patch, but still the funniest ele build)
Depending on the class distribution glass canon wellomancer can be very funny.
I guess I don’t need to mention that it is a bit risky to play.
Mesmer and engi are also very nice and tactical.
For me Ele was almost as boring as warrior.

ele is snooze fest atm, literary mash any keys, collect points…. i wouldn’t suggest it
necro may be fun but really slow, not for everyone
engi is probably better choice for complexity, mechanical skill etc.
if you really want to play high skill cap class, try thieves…. they are not exactly most broken thing atm but they are very mobile, quick, require good reaction time, can be quite demanding mechanically and are very very risky atm (which makes them so fun)… problem ofc is learning curve but tbh engi is also not exactly a class you can be good at within few matches

Bunker guardian is one of the hardest ones imo. Yeah sure it has tons of sustain, but the hard part is to keep as much of your CDs for your allies as possible.
Shatter mesmer/thief is also kind of hard, but these are being carried by passive procs from traits and runes of vampirism atm.

Play without vampirism and you got a challenge
It may be quite helpful for thieves, but all other classes can easily play without. (especially mesmer)

Hmm, engineer hard? One of the easiest profession in the game, if you don’t equip more than one kit. Go with double pistol and elixirs + elixir gun: it can’t be easier. Try Rifle + bombs and gadgets: simple again.
If you want to complicate things, sure, you can try with Rifle + grenades + turrets lol.

A LOT of pvp build run atleast two kits, since tools kits provide amazing utility and you usually run another kit for your damage.
Recently the most common build started running only one kit but that’s for a whole bunch of reasons. ( HGH being strong for the Moa elite utility, making you want to run more elixirs, which allow you to not have to take speedy kits for mobility, so you can take Lock On which is amazing. )
