Private servers have the standard models option available, you see the original char when observing but when you play you fight vs a standard model. Now I’m not sure whether an option needs to be ticked by the server’s owner or if just setting yourself to std models is enough but its definitely possible to have std models in dueling servers etc. (Angz has it).

Just mentioning again that you see the original model if you’re observing but it changes to std model when you enter to play.

I dont own a custom server so i dont know, but can Tournement Commands and the typical 1v1 settings enabled at the same time?
