Three professions
If you are looking for PvP you have various options for each class.
Engineer at the current meta is either a Crowd control class with a fair amount of healing and offers water fields for your team (aoe healing) or you can go for the more agressive heavy condition class, and lastly you can go for a glass cannon class that is really much weaker than light armor classes because you have very limited access to stealth and invulnerability.
Elementalists right now are possibly the strongest class at the moment but you can expect it to be nerfed in the near future (for god sakes anet please do.) It offers aoe support while still doing a fair amount of damage. Your other option with elementalist is to be a medium-ranged glass cannon however you have very limited access to invulnerability.
Both engineer and elementalist have a good learning curve as you will have to get used to switching kits/atuenments in order to be rally good at it.
Guardian is mostly two choices. You either go as a bunker guard and offer one of the best support in game, it is relativley easy to become an okay bunker guard but there is a very good ceiling for you to become a great one. The other option is DPS guard which is straight up easy to play.
In terms of difficulty to learn I would say Engineer>Elementalist>Guardian. I would recommend you try out engineer as there are so much versatility with that class..as for elementalist the longer you play it the sooner you realize it has similar rotation over and over again which can get boring. As for guardian, if you are a fan to be the support class then it is the class for you.

Elementalist and engineers are the “jack of all trades” (being ele the king with their supportive and DPS attunements) of PvP, the 80% of time they are adapting their playstyle to the situation… With guard, you are more “stuck” in a playstyle, but you are better in this area… With ele you are doing rotations between attunements and skills. You can have a more fixed perfect rotation (dd ele), or different rotations (staff, fresh), but you need to know your weapon skills and how to do nice combos with them. You will have an important role in DPS when in DPS attunements and support when using support attunements. With engi you dont have this “rotations”, you have a big choice of skills without cooldown (not like attunement cd), and you have to work with. You are not like ele and their multi-job, but you have a big choice of abilities too and you need to know when is better to use one thing or another… With guardian you will always have an important role tied to party support (like water ele), even if you are DPS . Less “frenetic” gameplay than ele and engie, but more “heavy” skills , so you have to manage your cooldowns wisely… All in all, with engies and guardians your job and playstyle is really different between different builds, with ele they are pretty similar but you have a more varied playstyle inside a same build…
But, of course, the best you can do is go test them

I like to play something who can support his teammates well with stuff like cc, heals, other forms of protection and utility, that kind of stuff.
Preferably while having some ranged attacks, with good mobility and survival cooldowns to stay alive. I dont like the warrior/juggernaught tank type, who can soak up a lot of dmg. I prefer the sqhuishy type who has to use mobility, has to time his abilities skillful and use survival cooldowns to stay alive
Ele, Engi and Guardian fit that the most right?

Yeah I kinda worried about that from watching some footage from elementalists.
As if you are forced to rotate your attunements in a certain way to do the right job rather than that you can choose when you want to go to certain spells in certain attunements. This is correct?
But, of course, the best you can do is go test them
I lvled them to lvl 3 to test out a bit in the training zone, but I still felt I could use some help, so therefore I made this thread.

Go to your home city, take the portal to Lion’s Arch, then take the portal to Heart of the Mists. That will allow you to test out these classes at level 80 with all skills and traits unlocked.
As for what you are describing as your play style, Elementalist would fit best, but if attainment swapping isn’t for you then go with the Engineer. I don’t think Guardian will fit your play style as it is a bit more restrictive.

I’d say ele fits the most to what you’re looking for. It’s a highly mobile class (probably the most mobile after thief), very squishy with base stats, but becomes incredibly taky thanks to boons and sustain. It has a loot of soft or hard cc, and can give boons to their mates as well as they can heal them.

Ele fits better your role (staff ele seems perfect), and yeh, with dd ele you have the might stack rotation, but you will not do this rotation ever and ever, you have to adapt to the situation. For other ele builds you dont have a “fix” rotation, so staff ele seems a pretty nice option
