Profession for dolyaks and camps
Any profession that can give Swiftness to the dolyak will do for escorting. There is no profession that could prevent the dolyak getting killed by a roaming thief.
As for taking camps all professions can do it – some face tank whole camp with migitation and heals, others by avoidance and some others pull out and pick off guards one by one.
Thief would probably be ideal as you can choose to escape or hide when odds do not favor you. Only thing missing is AoE Swiftness skill for dolyak escorting.

Ring of Fire
A clerics Elementalist can slow a roaming thief down till help arrives or (and I don’t know since I don’t play one) a thief can perma stealth the yak to safety however can’t swiftness the yak.

Guardian is best overall IMO. Mesmers can be quite good too at dealing with thiefs if built right the thief cannot ignore the Mesmer. Engineers can do a good job as well at protecting yaks. Pretty much anything with a solid bunker build that can use boons on the yak. Rangers, thiefs and warriors are the worst from my experience. I spend most of my time these days running solo havoc with a thief. But that said, a ranger, thief or warrior combined with a bunker class makes it very difficult also as you have a bunker to protect the yak and an offensive class to burst down the havoc. Oh and eles are bad also. If you don’t want to waste time levelling, Id suggest you work on your engineer build.
Guards can Swift doly 98% off the time with staff and heal them.
Thieves can actually put 10 in trickery for Thrill of the Crime and use a targetless Steal next to the yak to give it swiftness. Also, stealthing the yak is probably the best defense you can do when small groups want to hit it.
I find thief a bit lacking in camp defense versus multiple enemies though. Once the supervisor drops, there’s not much you can do since being in stealth makes your opponents get the cap. You could try to rez the supervisor with Shadow Refuge and that can sometimes buy you enough time to get some friends in to help clear the camp.
My Engineer can get up to 2 minutes of swiftness duration on a yak during a long escort
(Because someone will ask; Superior Rune of the Centaur + Drop Stimulant from Med Kit)
1v1, no yak is safe from a sub par to decent thief. The only class that’s been annoying on my thief (and I say annoying, but not close to stopping me) is either a highly skilled hammer warrior or a guardian. A few well timed aegis can suck.
Nothing hurts more when you escort a yak (+ 2 lvl 82 guards) and there comes a warrior and snipes it.. :/ Awww, next yak may come in…. again sniped…. next..nope… for around one hour… is frustrating… I can’t even defend a yak against a warrior yak sniper. yak dies, but I kill the warrior after the yak is dead… my goosh, please fix somekind of higher health pool for a 250 camp yak. or some kind of weapon they can use to stun the enemy.

Can’t blind stop them? Blind, aegis on dolyak, protection on dolyak, daze, stun… won’t those work on thief?
I’m finding my engineer really boring lately (have to choose between powerful or fun), so I’m playing warrior (25) or necromancer (uummm… 8 )

I can tell you straight from experience that a healer staff elementalist is incredibly annoying for anyone trying to kill a yak.
This is coming from a roaming p/d thief. Healer staff eles have a lot of support healing, condition removal and they give swiftness.
