So what’s the best way to play elementalist after the recent nerf? Is bunker ele at all viable anymore?

Bunker Ele has been noticeably slowed down but it’s not unviable.

The new flavor of the month is Fresh Air Scepter Dagger Burst builds for PvP. I suggest looking for Zoose’s S/D guide, post-patch.
