Having trouble
I play both a thief and a D/D ele so lets see if I can’t help you out! I too find d/d eles difficult to fight on my thief, but I’ve found something from both perspectives that I find helps: patience. If you try and go all in on an ele like myself, you’re just going to screw yourself over. Apply constant pressure over a long period of time and we go down. Also watch for our combos. If you see a d/d ele attune to fire, you can pretty bet that they’re going to do a burning speed + ring of fire (possibly fire grab), so at least dodge the burning speed otherwise you’ll be down 5k hp. Once they finish their combo however, there’s a slight moment when they’re vulnerable, so take advantage of it. I’ve made the mistake of going into water after getting bursted after unleashing a combo, which may be the end of me. Also: Daze. I have lost to a handful of vert good S/X thieves b/c of the daze on hitting an enemy from stealth from behind. This REALLY messes us up and makes us vulnerable. Another thing: Chill. Equip a sigil of hydromancy on at least one of your wepaon sets. One of a few things’ll happen. Either the ele will pop water to get rid of it (making them vulnerable now that water is on cd) , burn a cantrip (again making them vulnerable), or they’ll let it stick severely crippling their ability to fight.
tl;dr
Daze. Chill. Constant Pressure. Be mindful of their combos.

Hey! Just wanna congratulate you on not just whining about the class being OP but instead asking for ways to beat it.
I find the absolute worst thing to happen to me when fighting is to be chilled a few seconds after I’ve left water attunement. Chill really screws an Ele up as it puts our attunements on a longer cooldown and a primary way of removing condis is to attune to water…you see how this is an issue?
It may not seem like much to you but to the Ele it’s all hands to panic stations.
Try your absolute best to land Steal and Ice Shard Stab 2 to 3 seconds after the Ele has left water attunement.
