What should I Do?
Given what you’ve done and wanted to accomplish, I’d say you beat the game. Now either wait for post 80 content, farm DEs moar, start an alt, play a new game.

Well for starters it sounds like you don’t like 2/3ds of the game so you’re already hurting yourself there (arguably more if you don’t want to do world completion in the rest of the world outside WvW).
As for getting gear, that is just the start. Play the game to have fun. You enjoy PvE? Ok, then do more PvE. Dungeons, crafting, DE’s, etc. Whatever you enjoy. Also set some new goals for yourself.
There’s a ton of things to do in this game, you just have to decide which things you want to do. There’s no one forcing you do do certain content like in other games (which I personally like) so it’s up to you to decide.
Everyone thinks a game is about getting gear and then they’re done. This game is not. In other games I quit because the endless grind for gear and endless RNG was not fun in the least. I don’t understand the fun in that. What I enjoy is the idea that I’m finished. I don’t have to do anything so I’m free to do whatever I want, whenever I want. Being forced to continue to grind gear makes it feel like a job. I have a full time job already so I don’t need another.
Right now I’m slowly working on my Exotic crafted set and then I’ll move onto accessories and my weapon. I’m in no rush. After that I’ll split my time between getting 100% world completion and doing lots of WvW and the occasional leveling of an alt. I haven’t done much dungeoning, either so that’s also an option but I have so many other things to take up my time I think that’s farther down the road. Oh I also have to get my cooking to 400. So that’s my plan. And then once my primary alt hits 80 (and who knows when that will be) I’ll do it all over again on that one. So I see no end in sight right now which is great.

I’m one of those players that misses raids(from multiple other MMOs(let’s not be closed minded)) so when I was approaching 80 I felt let down and that the game would be quickly over as the mission would be done and for years of raiding it was all about the next story/boss to beat. Gear was a non-issue for me since it came along, occasionally, whilst having fun with a set group of friends in a difficult instanced setting. So I completely understand where OP is coming from. Alas, I value your positive outlook on the subject and will try to adopt something similar for myself to keep me interested during my times to come. Thanks for sharing.
If you enjoyed raids than I might suggest slowly mastering all of the explorable dungeons and all the routes with a static group of friends. They’re only 5 man but they are still designed to give you that challenge you generally get from raids. Plus, you do get some nice and unique looking gear from them.
