I usually run some variation of 0/?/30/30/? build with AH.

Is there any combination of gear that will give me:
35% crit
3000 Attack/Armor
19k health
1000 healing

I have spent hours on the builder and can’t work it out.

I can get all those numbers except the 3000 attack. By the end of the month I should have enough laurels to buy a full set of Ascended Jewellery.

This is as close as I could get with out Celestial Armor pieces.

If you are planning on running in a large group, you should have a look at the sigil of stamina as well. It’s like a super version of Omnom Compote for Guardians with Selfless Daring + high Healing Power. I’ve not tried it myself, since I have very low healing, but with a build like yours it should be great in a zerg!
