I'm looking for a total beast of a Guardian
I suggest reaching 80 and figuring out for yourself why going “full DPS” means having very little to no survivability until you’re very good at doing what you do. Then come seeking build advice. Just my humble two copper.
I agree with christos, there is no handbook and going full dps before you understand the class will most likely ruin your experience.
I will give you some advice though:

Judges Intervention
In those you probably have the most surprising attack chain in the game.
I agree as well, being a mostly damage guardian myself it really takes some learning and finding the right balance of damage / survivability. Starting out more tanky is generally the best way to go, and then working towards that balance that fits you best. Been playing since almost release and I am still testing builds that give the right balance for my play style.
And Brutaly is correct, Sword/focus + hammer and JI are very good starting points for damage, and also some good survivability. Only recently have I taken JI off my bar, and i miss it very much. >.<

What are people’s thoughts on Smite Condition? I know it’s not the best for condition removal, but it seems to still deal pretty hefty damage and it does have a short recharge.
(Personally I like it a lot, but I’m not too experienced on building for direct damage on Guardians.)
It’s pretty obvious, and nobody’s impressed.
The best thing about Smite Condition is pairing it with Monk’s Focus for easy healing; I ran a meditation build for most of 60-80 and liked it fairly well, but I ditched it for an Altruistic Healing build with shouts and consecrations after I hit max level.
I’ve build my Guardian in a Hybrid version.
Trait: 10-30-0-30-0
Equip: Armor Soldier – Weapon Knight – Trinket Knight
Weapons: sword+focus and staff/greatsword/hammer (in different kind of situaion and party).
Whit that build you can hit the 80-90% of critical rate (depend on sigils) and whit that deal a large amount of damage.
But whit the soldier armor you have a good hp pool. (18k, more or less)
And whit the shouts you’ve good buffs and condition remove skills.
It’s good in damage and don’t lose too much in defence.
You can use blind and block to evade a lot of enemy attacks and give a good damage.
That’s a pve/dungeon build. It work good in WvsWvsW, but you need to change the utility in Signet of Wrath to hold the enemy, Stand Your Ground to give mass stability and retalation (good against enemy that do AoE on your party from the walls) and Retreat to give a good mobility buff to your friends.

I suggest checking out the latest posts of the Paragon build that Harbringer posted, works well in WvW based on what you want.

The best thing about Smite Condition is pairing it with Monk’s Focus for easy healing; I ran a meditation build for most of 60-80 and liked it fairly well, but I ditched it for an Altruistic Healing build with shouts and consecrations after I hit max level.
It’s one of my favorite utilities. I use it all the time, and I don’t even run a mediation build. Short CD, removes condition, very high dmg, (+4k crits) and also throw in the fact it’s AoE.

i want to add that as a DPS Guardian, you will most likely want to jump in, drop the bomb, and get back out. like a few have mentioned, if you know what you’re donig, you can still last quite a bit if the fight happens to go on. but it does take practice.
i myself went from a standard hybrid build to more DPS focused. and i enjoy it a lot.. still learning a lot! but the most i learnt was from the early stages, learning how to survive, how to outlast and really understand and play the class mechanics.
then moving onto berserker or being “glassy” if you will, made more sense to me. though at the same time, i’ve talked to some Guards who’ve been DPS focused the whole time.. in a sense, it’s like how Luffy was thrown into the jungle by Garp and he survived and only got stronger that way. lol.
but i would recommend trying out different builds anyways if you like the class and figure out what you enjoy the most and do the best at, the two not mutually exclusive or dependent on one another.
