I never go anywhere without my hammer quipped That is just me though. I love the control on hammer. Especially for PvP. Sword/Torch is fun. I’m using that as my 2nd weapon set.
All the weapons are useful, and it’s worth trying them all out for various periods of time as you level up. I hated hammer and staff when I was first using them, and now they’re the weapons I almost always have equipped.
Greatsword has excellent AOE damage, though a lot of that comes from the 2-5 skills, more than the 1, which means you’ll want to have another good set to switch to when you are waiting for cooldowns.
Sword is the best single target melee damage; scepter the best at range, though scepter is less effective vs. enemies that are moving. I actually used scepter at melee range a lot while I was levelling, with torch to light the enemies on fire – if you are in melee with the enemies, you don’t have to worry about them leaving the circle of damage from Smite.
Mace is more defense/healing oriented, and pairs well with shield and focus.
Guardian’s hammer is one of my favorite weapons in the game, of any of the classes I’ve played. The 1 chain creates a symbol of protection with every third hit – once you’ve been through the chain once, you have protection for almost the entire remainder of the fight. The 2 skill is a blast finisher on a relatively short cooldown (especially with the trait that reduces cooldown on 2handed weapons by 20%); the other skills are primarily control oriented – it’s particularly fun to hit an enemy with 4 and see them go flying , especially if you can arrange for them to go over a cliff.
Staff is fantastic if you are in an event with a ton of enemies, as the cone attack on 1 is very wide – you’ll almost always be able to hit 5 enemies at a time if there are at least that many to hit. The might stack on 4 is great when you are in a group, and when you are higher level, it combines startlingly well with the Altruistic Healing trait. The 2 skill does deceptively solid damage and can also heal your allies, and while the 5 skill takes a little too long to go off, it’s great to throw in front of a bunch of enemies rushing at you.
Generally speaking, I have two pieces of advice:
1. Try them all as you’re leveling and go with what works for you personally.
2. While you’re leveling, especially at the lower levels, the “rules” for weapons are very different than at high levels. Sword pales next to GS without Right-hand Strength, for example. Basically, there’s a lot of info on weapons that, at least for a while, won’t matter to you and you can refer to #1.

You may want to also point out that aegis/block won’t protect from fall damage and that Guardians can’t use daggers while you’re busy pointing out the obvious there.

When leveling, you can never go wrong with greatsword. At the very least, the mobility is swell and the damage is good.

If you wanna a fast lvling go GS + Scepter&Torch (the top DPS weapons).
For fun u can use any set u want.
Started my first Guardian recently. Tried all weapons ofcourse.
About Staff, my first impression was WTF, in a bad way.
Anet should should have gone all the way decreasing the Staff’s range and should have made it a melee quarterstaff type weapon.
For melee i ended up with a Hammer, and for range i use for now Scepter/Torch.
GS seems great to, but GS is one of the few most expensive weapons to buy on the TP.
Could be an issue if u have little copper/silver while leveling.
My favorite build was a healing tank. I traited my mace to improve healing, while also making all symbols heal and larger. I would use Mace+shield/Hammer. The hammer can pound out symbols super fast, plus with the leap, you can stay on top of your enemys, along with the cc abilities.
When I need to stay alive, or use a heal, I switch to the M&S combo. The number 2 symbol on there would save me many times, because of my high healing stat, it would fully regen me in a pinch, and I would also slam it at the base of my teamates.
If I’m running a dungeon with him, I’d use the healing wind because the symbols and dodging almost always kept me at full health. No need for the heal haha! Us it on your party!
For leveling, the best set in my opinion is Greatsword with Staff; slot full Berzerkers so you can power through mobs and complete hearts faster. Travel time is also 80% of your leveling time, so Staff swiftness is really important.
Utilities: Heal Signet, Smite Conditions, Wall of Reflection/Shield of the Avenger, and any 1 shout you like. Switch around and customise to situations.
Always go 5 in Honour tree first, the vigour is too good to give up.
With PvE leveling you want to improve your quality of life so take Signet CD and 2-handed CD. I maxed the Valour tree because I like meditations but run whatever you want really. Valour and Honour both have defensive stats (Tough, Vit) to help with survivability.

You don’t need Absolute Resolution (Virtues IX) because you will never be overwhelmed by multiple conditions. You can slot Contemplation of Purity/Purging Flames if there’s something you’re seriously in trouble with (like things that stack burning). But don’t forget you have Heal Signet passive and Purity (Valour V) to help with that.
You don’t need anything in Zeal because the traits… suck.
15 in Radiance allows you to burn anything since you will kill mobs loads.
You can switch out Wrathful Spirit (Honour I) for Superior Aria (II) if you prefer.
Quality of Life:
Run around with Staff as it gives you swiftness (skill 3). Put Line of Warding down to stop melee mobs chasing you.
Maximum AoE:
Gather 5 mobs, LoS pull behind obstacles. Line of Warding to stop them, Empower, Orb of Light, switch to Greatsword, Binding Blade, Symbol of Wrath, Pull, Whirling Wrath, Leap of Faith, Smite Condition. Spam GS to taste.
Run Mace or Sword with Focus or Torch and Staff or GS in other slot for Veterans (skill points). Switch out 2-handed CD for Writ of the Merciful (Honour X) if you run Mace/Staff. You really won’t have a problem if your Berzerker gear is up to level. Ranged Vets and Imps will need more CC and reflects. I suggest Shield of the Avenger/Wall of Reflection. Sword + Shield also negates a lot of Projectiles. You also have Shelter and Renewed Focus which can be timed to block shots.

I almost always have staff on standby. The might stacking is incredible. Make friends with a mesmer who likes to share boons. You will win in dungeons.
What has been said above has been true as well, especially Trait 15 into Radiance and 5 into Virtues. Everything else is gravy dependent upon your playstyle. Nothing beats AoE blind, vuln, burning and might stacking (before you even get to staff) just by hitting F1 everytime you kill something.
In my experience:
Sword = Annoy a single target or small groups of mobs.
Focus = Awesome consecration / symbol combo fields.
Scepter = Range-required boss.
Shield = Novelty good in small fights or specific situations.
Torch = (see: Shield)
Greatsword = Bread and butter for symbol / zeal builds.
Hammer = Boss repellant; awesome consecration / symbol combo fields.
Staff = Battle grease.
