I think judging by the fact that vitality is a joke for this class any way since we have really low HPs that Knights might be the way to go since toughness would go further.
Clerics would be pointless to the build above.
I’d suggest a marauder amulet if you want to get a bit more survibability on a power build and guardians already have pretty good self healing, is almost competitive with berserker damage wise, and also given that you get 3 for free from the HoT story achievements.
Vitality is probably the most important stat for survivability since an open world build is going to be more than capable of healing up damage, so their only real issue will be dying to burst damage before they can, which is possible due to their low base HP.
It’s worth noting that vitality is not a percentage increase to base hp, but a flat increase. As such, it’s even more important to low base hp classes than it is to high base hp ones. (12,000 → 17,000 is a much higher percentage increase than 17,000 → 21,000)
It works the other way around as well, with toughness being less valuable for heavy armour classes than it is for light armour ones.

How ever in Open World what gear stats would you recommend for more Survivability, Valk, Clerics, Knights?
I do use valkyrie stats in all of my ascendant weapons for Guardian. The main reason was due (before the latest maps) they weren’t any trinkets with full valkyrie stats, so the choices were between the armor or the weapons. The weapons are cheaper to craft and had more stat points. Usually (when was actively playing this class) my choice was Valk weapons and one of two armor pieces; all the other gear full zerker, vitality in the infusion armor slots:
The main rule for me (in WvW roaming) was: enough HP to prent getting one-shoted, which means ~15.500 HP. For WvW raid doesn’t matter too much: Guardian usually doesn’t provide damage in zergs, but support, buffs and some cc. You should aim towards 19.500+ base HP and armor above 3k+
