What would you personally choose for armor if you were to make a tanky Guardian? Soldiers, Knights or Clerics? (Yes I realize most people go more offensive like Zerker)

Sentinel’s or Nomad’s if you really want to push it. Stick to grouping with friends and guildies or open world content cause pugs will give you the boot in dungeons.

You can make a tanky guardian, but you can’t make a tank guardian. Know the difference.
