Need Help Filling Gaps in This Build

The armour is hard to guess, it could be a mix of many things, but those general stats are fairly typical of a “not-full-tank not-full-zerker” build.
In terms of traits, they may have gone for Remorseless over Lead the Wind, but I am not sure how worth it that would be without a GS. Could be though.
For weaknesses I’d have to say conditions. They only have 3 cleansing skills, 2 on fairly long CDs (and that’s assuming they are using Wilderness Knowledge and not Poison Master, which is possible given what you said). Maybe they had Lyssa Runes to help with this? Who knows.

From the strange setup you saied he used, the pet you described and the extra survivability, I would say he was zerk/celc hybrid with bleeds and poisons, I also suspect he want for the poison master trait(thats why the poisonous pets). He went for signets build with “brutish seals” to make up with might for the missing power/condi damage. Hoelbark rune plays out with both might stacking and condi defence(His build might lack active condi defence). I would say somthing like that:

You’d be much better off posting your build and asking how it could be improved instead of us trying to guess what someone else (that we’ve never seen play) was running
Cufufalating probably has the closest build to what I was having trouble fighting. I’m rather sure they traited into enlargement because in two separate fights SotW was activated the moment their HP hit 50%.
Since the patch, I’ve been getting dropped within what feels like seconds. I’ve tried swapping out QZ with SoS and tweaking my build but it doesn’t make a huge difference.
Might consider dropping marksmanship for skirmishing. You would have plenty if swiftness, which would let you swap the movement signet to stone, plus quick draw would up your damage.
Swap bear to a bird, dog, cat or spider. Personally I’d go with a bird and use wilting strikes in BM. You’d be blinding and putting weakness on your opponent every 5 seconds.
Also might want to work a little more toughness/vitality into your build when dueling.

If you decide to stick with marksmanship you should definitely run remorseless instead of lead the wind while dueling. Strength of the pack alone will give you opening strike a number of times, it will also work great with your pack runes, two hand training, and the fury from survival skills. But if you do that you should add in some valk/cav gear so you don’t get 1 shot.
