Fresh 80 WvW
Learn COF path 1 and 2. It’s easy after a few runs. Gets you zeker (DPS) or carrion (condition) equiv armor/weapons very quickly and will make you a lot of money to buy your rings/accessories. Use +%Gold food during these runs.
I recently levelled my 80 thief too. But its like my 7th 80. Best thing to do is craft your armor. I did berserker because im crit/damage thief build. Weapons were crafted too, using Pearl pistols and daggers. I transmuted them because I think the pearl weapons look ugly. Buy an amulet with Laurels. Get rings and backpiece from FotM. Depending on your build, you can either buy runes or craft them. Personally I had to buy mine because the ones I wanted aren’t craftable. Buy your trinket.
If your a chef work out what recipe is best for you and craft in bulk. Remember sharpening stones and maintenance oil, craft them if you can or buy them from TP.
Crafting can get you gear, but is hardly the efficient way to do so.
It’s more for exp, contributing to goals that require level400 crafts, and making useful niche items (like chefs and Omnomberry bars)
You’ve probably found your fair share in fine/masterwork gear and have been using that. If you wish, buy a set of Rares for a few gold from the Trading Post or hope you get lucky when getting loot from keep-lords and stuff.
The main focus would be to collect badges of honor and trade them in for the WvW exotics at your server’s base.

Otherwise, go into PvE and grind CoF for a week or two to get yourself an easy set of exotics that way.
Don’t bother with Ascended gear. If you’re a WvW main, that stuff isn’t relevant. ArenaNet has stated they plan on implementing forms of progression in WvW anyway.
