It should be high enough to turn your camera to follow your target.

It should be precise enough to aim your shadowsteps, infiltrator arrows and such
I can move from the bottom left corner of the screen to the top right with about one move of my wrist. If you can do that, and still be able to hit small buttons quickly enough then you will be fine.
This is not a FPS. You need awareness but it’s way easier to get it.
Also, be sure to bind the “Look Behind” key, as it’s invaluable when it comes to awareness.

It kind of depends on what you are playing.
I’m usually playing Sword/Pistol on my thief, in which case I need to be right on top of my enemy. But still kiting around him quite a lot, and following his movement.
If my sensitivity is not fast enough, I have to replace my hand with the mouse. Which makes my movement awkward.
If you are playing a Guardian spamming 1 in eotm. Well yeah in that case you won’t need sensitivity that much.
But its mostly depending on user preference.
Should it be high if you want to be pro?
No. It should be comfortable enough for you if you want to become “pro”. If you feel comfortable sweeping your whole arm around your desk but still being able to turn/look around and be precise, go for it. Others like it to be very sensitive and will be able to achieve the same results.
Its all about preferences.
