Things being small on Asura is actually a boon if you’re a male. Shoulder pads are laughably huge on other races and many of the trenchcoats look two sizes too large.

Norn female are great.

Aye, also things like some of the sweeter pistol skins are ludicrously enormous on the bigger species/races but scaled just right on Asuras; if you like their cartoonish aspect anyway.
I’ve got a few Thieves, of different species/races, but the only one who’s got to 80 is my Asura (female gunslinger) main. It can sometimes be pretty demoralising playing Thief at the moment, but she’s just so endlessly entertaining and hilarious that she keeps me going.
I’d imagine that the males have mostly the same animations as the females? Otherwise, aesthetics are so subjective that it’s almost impossible to give advice worth much of anything. There are also lots of variables that you won’t know whether they work unless you check for yourself, for each specific item.
A particular pistol skin might scale just right, or be too huge, or too tiny; or the sword that you like might have its point disappear into the ground or not; or item A might clip like crazy but item B doesn’t clip at all….
It’s a bit of a faff, but your best bet is to use the bank’s wardrobe feature; either with your existing chars, if any, or create a char, run them straight to the bank (or use the bank golem that you get), dress him up, delete char if you’re not happy and make a new one of a different species/race.

My thief is a norn female. I wanted to have a norn character to change into beasty form, and I figured norn male is way too bulky to be thiefy.
Just a pic to show norn female can still look thiefy at least.

for aesthetics, anything other than norn, i was going to say anything other than norn and charr, but i guess you could make a smaller charr and play on the " cat like reflexes" deal :P
I got thieves of all races, I like my Sylvari the most though :P
My Charr’s the smallest one you can possibly make, and she’s still enormous. As we’ve seen above, you can make a Norn female Thief look good, but, alas, the OP wants male.
BTW, FWIW, my dagger Thief is a small-framed Norn female, in T3 Cultural (with Viper’s gloves, no shoulders or head item); dyed in moody dark reds, purples and wines. She looks fantastic!

Male humans and sylvari have more fluid CnD animations than their female counterparts. Don’t know about Asura, Norn and Charr though.
Sylvari has the most athletic look without being a cliche human, and it has some really nice customization options. ( really hard to make two identical sylvari if you try not to )

Haha, this is why I ended up deleting my first thief after a few hundred hours. The run animation and dialog drove me crazy. Female sylvari are way more fluid. Had I realized that at the time I wouldn’t have deleted it.
And female sylvari are voiced by Jennifer Hale, which is a nice perk haha

Just go Charr. You have given your reasoning for not wanting Norns or Asura, so Charr it is. Charrs can be the size of a tall human if you shrink them down so being too bulky is not necessarily a drawback there. Same could be said for Female Norns though, so meh.
Daredevil staff Asura has a sort of Yoda lightsaber feel that’s pretty satisfying. However, the proportions of some of the armor can be a little weird (ascended armor comes to mind)
I have experimented with several classes with thief, and I think it largely depends on what aesthetic you want to go for.
For what it’s worth, I think sylvari have some of the best coats available- I’m especially fond of their elite cultural iirc. But human has some good skins too, and there are some really cool marauder-y style ones for charr. My least favorite set is probably norn.
Sylvari, you can color their skin/hair/glow to match your armor color-scheme without looking weird and it makes for really cool toons.
