Does the deflector shadow-step to the thief? Or does the thief shadow-step into himself? In case of the latter, what happens if a thief shadow-steps into themselves? They have to disappear and then re-appear inside themselves… But since the place they shadow-stepped from is gone, where do they shadow-step to?

For the first couple years, if shadow shot was reflected the reflector would teleport to the thief. This was actually pretty handy in wvw and pve. For example, the crystal guys in the Maw fractal could be teleported to you, which was quite abuseable at that time. They then changed shadow shot to be unblockable to get rid of those fun parts.
is simple, i actually discover this on one of my fights and i even played in slow motion.
target blocks, you shadowstep, and when you stab, the stab is blocked.
to answer your question the blind shot can not be reflected and therefore if your target is blocking he/she will still get blind.

Shadow Shot originally could be reflected, and it would teleport the target when hit to you and you would get blinded.
As it is now, the blinding projectile and teleport cannot be reflected or blocked (this is what unblockable means – it also bypasses reflects), guaranteeing the teleport of the thief to its target and blinding it unless otherwise negated.
