Depends on what you are doing. Anything from full glass (<2000 Armor) to WhatTheKitten Dire (3000+ Armor) is defensible.
Mostly you only see full glass on roamers, though. You simply cannot survive in medium-to-large group combat unless you have SOME Toughness to soak hits.

Meh, I run around with groups and zergs all the time in full zerker and it’s perfectly fine.
Just wear what you feel comphy in. Could always get both zerker and soldier to mix together to see how much HP/VIT you feel right in if you want to use any of it.
Cavalier trinkets are a popular choice if you’re feeling too squishy. They major in toughness and have the same +crit damage as zerker, but you lose a little power and all the precision. But with Hidden Killer you will always crit from stealth anyway.
Nice choice for a thief that goes deep in Shadow Arts.

it really depends on what build and weapons you running
if you going range setup like p/p or p/d go above 2500 armor even try 2800-3000 with condition setup as range setup is less stealthy and less as fast burst
if you going on melee range as more power and crit you got the less armor you need
even in zerg situation (L2P your limitation). so full zerk is ok to go with
i started with 2600 armor and after short time used to even 2000 armor
Just go as much armor as you can without sacrificing too much damage, or until you feel comfortable. Cavalier pieces are your best friend. I usually run anywhere from 2700-2800 armor on my Thief.

I am by no means an elitist or big headed. Now that I’ve cleared that up, I crafted my Theif to 80 in a day and ran full zerk gear with 0 30 30 10 0 traits. To this day I’ve still barely died in WvW.
You heal a ton in stealth along with condition removal. You get a lot of mobility, dodges and evades so there’s really no need to have much in terms of defense loadout.
I also run Scholar runes with Hide in Shadows, Shadowstep, Shadow Refuge, Signet of Shadows and Dagger Storm/Basilisk Venom.
I sit at around 11k hp and it’s more than enough.
I prefer Zerk over Valky purely because of the above and that I don’t like only critting on backstabs. (I run + +20% damage if target is <50% trait [Executioner]) over Hidden Killer.
To be completely honest, you can cast Cloak and Dagger and halfway through use Steal then backstab and they should be below 50% if not much lower. It’s hard to come back from that.
