1v1ing an Elementalist
When I face an elementalist I pay close attention to my health and defensive skills. If I’m able to use every bit of defensive ability I have and my health is still going down the best tactic is to leave as fast as possible, if not that elementalist will die eventually. There’s not a whole lot of middle ground when it comes to warriors.
Hmm, if the ele is a bunker spec, run away. There isnt much you can do unless your running some type of hammer/mace-X. And even then, you will probably blow all your heals before the ele blows any of his. Its an uphill fight and you gotta look for him to make a mistake somewhere. Then again, if you try to run, he has better mobility than you, so, yeah.
If he’s glass cannon specced. Pop Endure pain when he goes for his burst; breath in his general direction, and he should drop faster than you can blink.
I never won a single 1v1 against d/d eles in WvW. So just trying to run away is the best choice I have. Same for decent guardians and thieves. Luckily 1vs1 is not that common in WvW.
d/d bunker build, you can’t really win. I rolled one as an alt to learn how the kit works (i do this for any build i have trouble with), and it has way too many methods to nullify your burst and heal back to full. It wins by bleeding and burning you to death slowly (very slowly, since the build doesn’t do damage, but its enough to beat your own healing).
You can run from it pretty easy though, cause again, the damage is very low. I do believe they will nerf it again though. Its beatable, but not really by our class with a typical gs build. (I can beat it somewhat more often with a gimmicky condition build, but that’s it)

Currently the best way to take down an ele is to dodge our initial burst, make us use our cantrips (i.e. stun us, immobilize, etc.) and basically lock us down. The D/D bunker ele’s can be tough, but the worst thing you can do is run away. You don’t have stealth like a thief, we will catch you.
Also, I am working on leveling a warrior now, and with a hammer build you can quite easily take out a D/D Ele from what I’ve seen.

D/D-Ele is currently unbeatable, at least good ones
As thief with Sword/Dagger i’m close to even with them and it comes down to rng (which is working against me sadly). If I can remove regeneration and protection quickly with my flanking strike or steal his 20+ sec regeneration, I can win. If I get might and vigor, I clearly lost.
Stay out of churning earth. Stay out of fire aoe’s. If this means you have to engage them at range then do so. If you are not packing a ranged weapon well, you should be. :P

If anything, when the Ele starts channeling Churning Earth after a stun/KD, pop up with a stun break and start 100B. I’ve gotten some elementalists to stop channeling and reflexively run away, and if you watch the animation, you can Whirlwind attack through the ele to evade the burst.
Otherwise, I just try to keep snares and weakness/autos up while I wait for the Stability to end. Then it’s Hammer Time. I haven’t had many good opportunities to fight elementalists in small scale skirmishes, but I’ve seen a few that I’ve had a lot of fun with.
EDIT – I haven’t had enough chance to test, but does Churning Earth do its damage all at once at the end, or does it do damage while it’s spreading as well (beyond a cripple/bleed or whatever)? I’ve always been under the impression it does its spike damage at the end, but I just realized I could be totally wrong.

You can run away from a d/d bunker ele pretty easy. All you really gotta do is make sure to dodge the earth #3 skill. In terms of gap closers/escapes a warrior is as good as a d/d ele. GS 3 > 5 > swap to sword/shield 2 > 4. And if really needed, bulls rush after. They don’t do enough damage to kill you if you try to run (i roll a d/d bunker ele myself for fun)
