Build?
Cavalier armor with lyssa or melandru, zerker weapons and trinkets, 0/0/30/10/30 great for almost all weapons
What are your traits like? When I build I select weapons and traits first, then assemble armor and trinkets to get the desired stats. As for runes and sigils, Anet is bringing a lot of changes to them soon. I would wait before investing in them.

Currently I am using Knight armor/Hoelbrak runes, Knights Hammer/Rifle or Sword /Shield, Cavalier Trinkets. Sharpening Stones. + Poultry and Leak soup, 25 Bloodlust stacks. With this combo I have around 2800-2900 power, 45% crit chance (With Fury), and I am traited 0/0/30/10/0/30 when using Sword/Shield, 0/10/30/0/30 when using Rifle. Hammer is and always will be my main weapon. I know it too well to just drop it now. I will never leave you again my hammer!
45% Chance with fury is too low. it should be 40+ without fury to be optimally balanced defensive and offensive wise. The Hoelbrak+Leek soup is what I am currently running also. Thats keeps you from getting shut down from soft CC and retains decent power. I have ran melandru and Resistance+melandru and its too tanky without enough damage. 2800-2900 Attack is extremely low that rivals Clerics builds.
I know you are saying Solders is too tanky but knights is just as tanky and has less power and no vitality. I currently beleive that Soldiers Armor+Hoelbrak runes then Zerker everything else is a great balance.
If you want a sword n Board build that can use a hammer try this I think you would like it. This build is more of a small man or solo build. Swap out the Hammer for GS if you need more mobility. I use Bolas because a 4 sec immobilize is usually enough to down someone or land 100blades with a GS. Short cool down.
Edit the thing I mainly do not like about Full Cavaliers setups Is it forces you into a specific build if you want to be optimal that means 30 in Dis and taking Heightened Focus and unless you adrenaline is full you are at low power mode.
It also has power as a minor stat. with no precision. having all that crit damage is nice if you land a crit. But having low precision makes that not as often as you would like it to be and you do less damage most of the time because of it. I think a little cavaleers in moderation is ok be it a amulet or some accessories or maybe a back piece. But builds that use it for everything I think are like sleeping dragon builds that have potential to to massive dammage but in practice dont becasue of low power and low chance to crit.
I have run knights as my armor before and my general impression of it is. Same chance to crit as zerk, but when you crit its weak damage weak crits, and u sacrifice power and or Crit damage in zerkers case or power and Vitality with a little less toughness in soldiers case. I think with the soldiers setup if you can find a way to come up with the crit chance either by using a sigil of accuracy or using more zerker on other pieces of gear it turns out better than knights.
