Would need more information to diagnose the issue. pve, wvw, spvp are you under any food buffs etc. 2k health is about 200 vitality points, so check your hero screen and see if you have +200 next to vitality next time you notice the increased health.
as of december 3 patch:
All players will now correctly receive WvW bonuses. Players who transfer worlds will still be locked out of bonuses for the current and subsequent match.
theres a bonus that increases your health by 1-8% over the course of the week. this bonus affects all players in pve or wvw (not spvp) BUT the bonus does not apply to you if you’re in an overflow

PvE, and wvw. Just now when I logged in I got 27.5k hp. Its counted with food (100vita). NOthing change in the hero screen, belive me, ive tried to figure this out, its so weird…..
