I’m trying to put together a mace/sh+ GS or hammer build for some fun solo roaming. My question is what is the sweet spot for tough/armor/power/crit? What would be the thresholds for them.
For example, is 2300 power enough whilst having 3500 armor? Whats the lowest acceptable crit chance, etc

Ok from my 3,5 years of warrior playing i give you the sweet spot for power warrior.
50% crit chance (no need more)
Aim for around 2500 armor (no more then 2700!!! And if you have thick skin trait then aim for around 2600 armor. Look i can give you a full explenation why not more then 2700 yadayada yada.. I have had it all from 3500 to 2600 now and i can tell you that warrior doesnt benefit from that much armor, after 2700 its really a waste because the reduction % gets lower the more armor you have. And the more armor you can swap for power the better!! But i find that a bit armor does do wonders.. Full zerker with 2300 can be pretty hard and 2500-2600 is a very safe spot)
Aim for atleast 200% crit damage (with berserker elite spec you boost it to 220% pretty easy. )

If you go for full ascended you can have this with tick skin and beserker elite spec:

Yeah I used to run full cavalier/knight as gs/hammer, nothing could take me down, but the power creep is real now, and I need some extra damage to take some of these more sustain classes out.
Swapping power/ferocity for condition damage/expertise, can go a long way as well if you decide to run a confusion/bleed build. the genral set up is the same, but the stats are just different. Hammer, mace/shield have alot of CC on them, I have run Hammer, mace/shield with Stomp+bullrush, as well as splashed in berserker (replacing discipline) to take headbutt and it can be fun. Warriors have many more options for roaming than in other modes, but follow the general rule of 2600 toughness, focus on two stats, and you should have fun.

The correct answer is probably as much damage as you can run without spending most of your time dead, which partially comes down to playstyle and ability. In that sense, it’s difficult for anyone to say X stats are what you need.
That said, try running Cygnus’ build below. It’s put together well, has lots of sustain, uses all Berserker gear, but often has +1k armor from Rousing Resilience.

Personally, I ran all zerk with maxed out power and carnage (I run a sword or axe rather than mace). Suits my playstyle best.
I’m on the same boat as nicknamenick with the 2700ish, I run power but my only toughness comes from having ascended Knights armor and def line and I have zerk everything else. It’s a little more than 2700 but I also hop in zergs with it so I like having a little bit more, but when I go solo roaming, it does feel like I have more than I need. Hope that gives you a better idea statwise
