Sword/Axe - is this a viable combo?
Viable, but not optimal.
What i would do is use sword+warhorn for my 2nd weapon slot just for the mobility. Make sure to turn autotarget off.
Is dual axes a better dps/survival combo over the sword/axe?
sword/axe can be a decent setup for dungeon runs if you use the longbow to set up combo fields and then leap through with the sword and whirl with the axe for some pretty good damage

I think it could work, if you focus on condition damage and critting, put a Sigil of Earth on the Axe. Should be able cause some nasty bleeding

S. Earth on the sword and geomancy on the axe imo would be better for that bleed stacking with the longbow for burns (and another S. Earth on LB). I ran that setup for a bit on my war only with different off-hand weapons. I also tried sigil of doom for adding poison to the condi stack towards the end and found that it does not proc on longbow attacks. But I ponied up some more gold and just re-sig’d doom onto my MH sword, geomancy on off-hand weapon and then earth on my longbow and it worked out better.
However the moment you get a thief, engi or ranger in the party you’re fighting for bleed stack space and the build starts to really drop off in contribution since all 3 of those other classes are better at condi stacking. In the end I went back to GS and pure damage since you’re never “fighting your teammates” over who gets to apply direct damage.
This is PvE though, OP, so really anything is viable. I have a few people I regularly farm dungeons with and we have at times auto-attacked our way to victory using only dodging and self heals when needed while shooting the breeze in chat. Once you know what you’re looking for and have a bit of coordination with your dungeon crew you can pretty much run anything you want successfully. Might not be the most optimal for speed running, but that’s a different matter than being viable.

Sword = condition damage, axe = pure physical damage. Can’t itemize both effectively.
If your going a sword + something route, you will probably want to pair it up with longbow so that you can itemize into condition damage (bleeds for sword, and fire for lb) Since this would really limit you to a certain gear set, i don’t really recommend it. For example someone who wants to use GS or Axe or hammer, can basically use the same gear.
i actually do this build and have a good wvw, not so good in dungeon , use 25 arm to get 10 % to bleed foe than your 5 skill is going to be very good.
20 power, berserker power and dual wielding
25 power, rending strike, blademaster, attack of opportunity
15 discpline, hegihtened focus , and reduce swap thing
10 tactic , empowered
utility , i usually use dolyak signet for stability
i use berserker archtype, so my final chain skill 1 damage aroun 3,5 k, and my damage is very direct
on wvw it is very good shock build as those glass cannon dont want warrior up close and personal with skill 2, and your chain 1 is very quick to do some fast damage not to mention the bleed, and you can use skill 4 and 5 for maximum damage.

in dunge well not very good you have decent dps but squishy
