What class would fit me?
Warrior and/or Guardian.
In terms of game play DK is more like a offensively build Guardian, try GS with sword/focus meditation build.
Warrior has more or twitchy game play, kinda like street fighter. (or maybe monk in wow, I never played one)
However at the current game balance, offensively you will have more success as a warrior.

Its been a couple years since I last played WoW, but if I remember correctly DK’s felt more like a hybrid class of warlock+warrior which is hard to find in a single profession in GW2. Since your skill bar is limited to (5 weapon/3 Utility/1 Elite) skills your build needs to be more focused. You will have more options depending on which utility skills you choose and what weapons you are using which have different skills depending on the profession.
Unfortunately though if you want something with a focus on melee and “tankyness” your only options are pretty much Warrior or Guardian. Warriors in GW2 are basically the traditional mmo warriors. Get up close and kill quickly relying purely on our large health pool and toughness to get by. We also have some of the best team buffs available with our Banners and shouts making us highly desirable in group play.
Guardians are basically Paladins with less health than warriors, but more team protection and defensive utility. I haven’t really played very much of the Guardians, but they function in a similar manner.
Lastly if you just want the condition and deathly feel of DK’s the closest you can get is with Necromancers which are pretty much Warlocks. They have variety of condition skills/minions. They aren’t built for tanking unless using Deathshroud or using minions as meat shields, but its all temporary. Just keep in mind they are a very selfish profession offering little to nothing in group support focusing only on spreading conditions and dealing damage. Not a very desirable class in PvE/Dungeons as conditions are capped at 25 stacks on enemies, but can be very good in WvW zerg gameplay.
I recommend you just check out the wiki and read up on each professions and their skills to see what suits you best.

There is no offspec with characters.
Every class can fufill a different roles but the main ones are as follows.
DPS- Straight up all damage either relying on your own personal skill to survive by dodging hard hitting attacks or the help of allies to survive. Keep in mind DPS is split into two methods of application. Conditions and raw Damage.
Support- Generally the “Tank” but you will still want to dodge attacks to stay alive yourself. You will focus on keeping your team mates buffed and alive so as to maximize their survivability and damage. Now Support is a general term that is given to any task that will help your allies while antagonizing your enemies. Some of the ways you can do this is to apply buffs to allies and conditions to enemies. Such as Weakness, Poison, Cripple, or Chilled. Alternatively you can buff allies with Might, Regeneration, Aegis, Protection, or Fury.
The following is the Guardian build I was talking. This is what I can remember off of the top of my head, so there might be some changes here and there. You probably should research it in the Guardian forum. Also, once April 15th rolls around, you can use travelers rune, which will be better.
Contrary to the normal belief of guardian, this build really doesn’t depend on boons. It certainly has the offensive magical knights feeling that DK has in WoW. You can create symbols, pull people to you, teleport around, apply burning. Keep in mind that your best burst is Focus 5, and your survivability is your ability to apply blind, and aegis, so its not an easy build to play.
