Which offhand for my crit-sigil-GS Warrior?
Hammer is a must in WvW. Ideally you would replace GS with the Hammer and have Sword-Warhorn or Shield for your other set. Currently Savage Leap is our fastest gap closer, lets you get in nice and close to follow up with some CC from the Hammer, also Sword’s F1 ability very much helps in locking down pesky kiters. Warhorn and Shield both bring some nice utility.
But if you’re insistent on being another useless GS Warrior then please have a ranged weapon. If you get cripple or chilled you will be hitting nothing but air no matter what you do. Retreating to a ranged set can keep you in the fight for a little bit longer, though you’re kind of doomed already by having that horrid weapon :]

some warriors like the hammer, personally i think a traited longbow is essential for WvW, but that’s just me.
my advice is unless you are going bullrush—> frenzy —> hundred blades, then you should skip the greatsword in WvW.
as for your original question, sword/warhorn or sword/shield is probably one of your best secondary weapon sets. if you utilize the greatsword for mobility properly then rifle or longbow are a fine choice as well. but if greatsword is going to be the weapon you use more then any other weapon then sword/warhorn for the mobility is what you want.
since mobility is how Warriors stay alive in WvW.
The thing is people tends to miss GS best skill is actually WW. GS 3, 4 and 5 when used properly makes it one of the most mobile weapon for warrior.
I realised most people tends to use GS 5 (Rush) for damage. Use it as gap closer and before the final strike, cancel it. You would have close up the gap and free to use GS 4 or 3 depending on situation.

How many times do we have to go over this..GS is taken for mobility on 3+5 and for the invulnerability on 3, mainly. Just use bolas pre 100b to get it off if you really want to or Sword F1 burst then 100b to get it off.
I bet you half the warriors out there are not aware of the invulnerability on GS3.
Just check this thread:
http://www.guildwars2guru.com/topic/80239-warrior-www-balance-build/
Check the initial builds by Avliss. the 0/25/20/0/20 would be your best bet at achieving balance. Its a bit squishy so youl have to learn to use a few moves to get out of trouble. Watch the video and youl pick up on them.
There is also another thread about someone using GS/hammer with vids/tips etc on these forums but you might have to go back a few pages.
Hammer+Sword/warhorn is good for running with zergs and can be good for soloing but there are many builds/classes that can overcome that combo.
Have fun out there.

XII, it’s 0/25/25/0/20 by Avlis and you are totally right about it being balanced DPS. I simply love this build as there is so much flexibility in changing your eq to fit situation or even weapons without re-trait. Changing traits on the fly makes this build balanced, eg. if you use Hammer just change Last Stand to Merciless Hammer.
