It’s better to use GS as primary with 65003 traits and swap to axe + X.
X can be whatever, but generally speaking the most useful offhands will be warhorn, sword and mace.

I’m relatively new to the profession and have been enjoying it a lot in the past 2 months mainly focusing on gs/lb build with ps to stack might but since patch I’m seeing a lot of axe/axe warriors and im wondering if it’s better to dual weild axes now since the axe 5 got buffed. any opinions?
