My elementalist had a broomstick, but after the new feature patch it is gone…
Did it turn into a potion or where should I find it now ?

Have you spoken with the new NPC Black Lion Armor Trader? Check with him near any trading post in the major cities, make sure to do it with all your characters.

I don’t know what happened to any of the accessories/toys that came with the outfits for my pirate, cook or witch.
Since they can only be worn over armor, I suspect they may not have made the transition.

I miss my cook’s little Charr sous chef minion.

Toys were given to the characters that did the initial outfit conversion via the NPC Black Lion Trader. Unlike outfits, which can be duplicated for free for any of your char, toys are account bound items, and you get only one per your original town clothes set they were part of.
So, check the inventory of all your characters.

And make sure that every character speaks to the BL Armor Specialist, near the TP/Central Bank in each of the racial cities. (If I recall correctly there isn’t one in Vigil’s Keep.)
