I just finished crafting Courage as the final requirement for the Fine Wining achievement but it didn’t trigger completion

You have to unlock the skin for the item to count toward the Collection.

You need to account bind items to have them count towards any collection. Your courage is currently unbound.

Well, in this case soul-bind but, otherwise, one could just purchase the item off the TP, get credit for the collection, and then re-sell the item on the TP.

Technically, by right clicking and unlocking the skin, you account bind the item and get it credited to your collection. It only gets soul bound when a character equips it.
