After doing some reading, I learned you’re able to change your character’s personality by choosing certain dialogue options. But what I’d like to know is if I could just change or “re-choose” my character’s personality instantly. For example, going from “Ferocity” to “Charisma”, like when you choose between those two and Dignity in the character creation. Is it possible? Or must I stick to dialogue choices only?

Dialogue choices only. The indicator of what your personality is was removed in an update long ago, so it is difficult to know what personality your character has. It makes little difference in-game, though there are a few aspects still viable.

So if I just “spam” a certain dialogue choice, say, involving charisma, my Charisma will increase and the others will decrease, which means my character’s personality can eventually change?
