Questions about Multi-monitor Setup

The first thing I would suggest is to try to get three equally sized monitors as this will likely be much better than the 2+1 you are currently looking at. I know this from experience as I used to have 2x 19" and one 24" – I now have 3×24 (all the same make / model).
You did not state your GFX hardware – wether yo will be using Nvidia surround or AMD eyefinity or another type for wide screen gaming! I use eyefinity and the game looks great whilst playing.
Sadly, there are issues with menu, UI, cut scene and character creation scale and placement when playing in ‘wide screen’ (more than one monitor). I am told that the issues occur no matter which version of wide screen gaming used.
There are third party tools that do not affect the game in any other way than fixing those issues mentioned. You will have to read the GW2 T&C / guidelines / rules before you even think of using such tools and evaluate any risk involved in such use!
The good news is that AN have stated they are working on a fix for the issues mentioned and will (seemingly) have said fix soon.
I would like to add a bit of information as to the basics of how eyefinity (and I assume other wide screen setups) work.
With eyefinity, the centre monitor is your main view and the monitors to left and right are for peripheral view. The image on the left and right monitors is deliberately distorted for peripheral view and thus it is recomended that those monitors are angled in relation to the main monitor – at around 30 degrees (mirrored). This can mean that it is awkward to set up different sized monitors to play correctly – though it is not necessarily a show stopper – I used to play LOTRO with such a setup.
A final point; if using only two monitors, the ‘seam’ where they meet will be centre of picture – really not the best for gaming! EDIT: You should have no other problems running GW2 on dual screens in full screen as long as your computer recognizes the dual screens as one. Further to this, if your dual screens are set as one desktop, you could play in windowed mode with the game window resized or maximised.
I lied! The previous point was not the final point! This one is. I cannot speak for Nvidia set ups but I feel I must warn you about eyefinity (3 monitors or more). If you are going the eyefinity route, one of the outputs is and must be used ‘Display Port’ and you will need either a display port monitor or, as with my setup, a display port adaptor. Display port adaptors were hard to find (limited stocks etc) when I first setup my eyefinity rig but I eventually got a display port to vga adaptor then later I got a display port to DVI adaptor – in both cases, I plugged the adaptor into the GFX card then the corresponding lead between the adaptor and monitor.

I use an HD7850, and was planning to use the Hydravision ATI has on its website. I have no idea what good program to use here, so I was just gonna go for the provided one. Just googled Eyefinity, and now am curious as to what the differences are.
About the dual screen part, so… I won’t have fun playing the game because I won’t be able to see my character? Him being in the seam and all. Is this true? Assuming of course that the game runs in fullscreen.

I have not used Hydravision (to memory) so cannot comment ont it.
The two screen option will likely put your character exactly where the seam of the monitors is and so it would likely spoil your enjoyment of any game played in that fashion.
Eyefinity is great in my oponion but there are other means to play in widescreen multi monitor. The alterante that comes to mind is the Nvida one – without checking, I think it is called Nvidia Surround.

I don’t think 2 screens is possible, and it certainly wouldn’t be enjoyable. It’s either 1 or 3 no matter if you use AMD or Nvidia.
On my Nvidia setup, all three monitors have to support the same resolutions and refresh rates (might as well be the the same kind to have the same bezels too, unless you build your own). Pretty sure it’s the same on Eyefinity. Difference between the two is that Eyefinity requires all three to be connected to the same card, while Nvidia is 1 per card (so 3x DVI or HDMI).
