I seem to be having the exact same issue you are describing, the problem started sometime between Sunday night and today for me. No issues with other games, checked all my connections, upgraded and downgraded drivers – nothing is helping so far.
I did however let it run for ~20 minutes after the last crash and got an (unhelpful) error in the Win7 event log:

Everything is at stock speeds. I am going to reinstall the game and see if that helps.
Edit: I reinstalled and seemed more stable at first, but I am running in a window with GPU-Z graphing temperatures now and GW2 is instantly spiking my GPU to ~80C+ temperatures. That is at minimum settings and well over twice the temperatures I ever see running anything else (Witcher 2, Metro 2033, Crysis 3, etc.) at max settings.
I’m not sure what changed to cause that but I’m guessing that’s at least a system of the crashing if not a primary factor (card is apparently rated for ~130-140C or so).
