in my 12 years of playing MMOs, there has been precisely one game that had sufficient endgame content to meet player demands 2 months after launch. Thing was, that particular game, EverQuest, also took longer than almost every game to reach the level cap and required a group for pretty much everything after level 10.
Every single game since then with the possible exception of EVE (which doesn’t work the same way as other MMOs) have been lacking in endgame content at this point in the game’s life.
Why? Simple. People who hit the level cap 2 months after launch and finish everything are the minority. The fact that they complain on the forums the loudest and most often is a symptom of them having the time to be able to hit the level cap and 100% completion in 2 months.
Remember EverQuest i mentioned earlier? One of that game’s major problems was it had precisely zero story and very few quests that the average player would actually do (and most of them were repeatable and raised faction. I turned in soooo many orc belts and beer in my day…) and actually suffered from not having enough content to reach max level: people would sit around and camp a bard that would spawn in an inn for exp. They would then move on to camp a gnome guard. I don’t mean a bunch of bards or a bunch of guards…I mean ONE. Over and over. All day. This was a viable option for good exp that was less dangerous than running dungeons. Hell it was less dangerous than running TO dungeons…EQ1 zones were notoriously dangerous.
Games these days, including GW2, have the opposite problem: the game is full of fun stuff in the middle and has a TON of quests, but lacks in endgame content. Rather, endgame content is roughly the same as it was back in EQ, but it takes less time, less planning, and far fewer people to actually do.

People are negative because people will be negative about anything. I’m totally serious. It’s in human nature to look at any good thing and find the flaws in it. Internet reviewers make a good buck reviewing treasured works of film and TV from our youth pointing out how stupid it was. Game reviewers are specifically instructed to find something bad about every game they review. The internet in general is a very pessimistic place.
If you like something, enjoy it. Just keep in mind it doesn’t always suit everyone else. And don’t let the negativity get to you.

Personally, with the centaurs, peace is either impossible or a long, long way off. So far the only in-game attempt at diplomacy was taking advantage of the fact that Centaurs love attacking human settlements by baiting them into attacking one at the same time as a group of Orrian soldiers during an Order of Whispers-related quest.
Centaurs, to me, seem to have their hatred so ingrained in their being that they can’t see past it to even try to negotiate. Add to that centaurs have a large number of tribes, and it seems to me that because of this hatred, the other tribes would team up to butcher a tribe that tried diplomacy.
And as for the grawl and their religion…demoralizing your foe is very important in warfare. You can win more battles with less bloodshed (on the battlefield at least) by making the enemy question their faith than by slaughtering them one by one. After all, if their gods are fallible at best or false at worse, and their gods are telling them to fight, should they really listen? This is probably why the main races are the way they are: Humans have evidence of their gods acting upon the world. Some Norn (or their ancestors in some cases) have actually MET their gods, which CAN be killed, but are still incredibly strong. Asura and Charr either believe in their own strength or simply see the gods for what they really are (very strong spirits). Sylvari…well, they’re born from their “god”, know who was responsible for their creation, and can even set up an appointment to talk to the Avatar of their god on a daily basis. This kind of conviction is part of the reason they’re still around, but can also lead to arrogance.

any of them will be fine. They’re difficult to just jump right into, but you start off slow and get abilities one at a time, so you get used to it rather quick.
That said, I’d recommend engineer or elementalist. I know you said you like cloth, but the engineer only has 3 types of weapons (rifle, pistol, shield) and a lot of toys to play with. Easy to learn, difficult to master, and can fill almost every role.
The elementalist also isn’t THAT hard if you get the hang of switching attunements on the fly and knowing what each one does.

it’d be funny if, after a few hours doing that, drops stopped entirely and you just started receiving grey items that sell for 1 cp called “A Life” with the subtitle “You need one”.
