You can use the Stow Weapon key to cancel many actions (maybe all, I havent used it much myself).
Also turn off Auto-Attack, that will prevent your character from continually doing things even when you dont want them to.

TBH, I would like to have a dodge roll or hitting #6 for the heal skill cancel any other stuff you are doing, like accidental rezzing a suicidal NPC, “involuntary mining” because you stand close to an ore during a fight and picking up event items (like oil drilling in EotM). I know that swapping weapons works (or dancing , but you might have those on coold own (or not available as a Ele).
Still keeps a volume of Kurzick poems ;)

pretty sure all the situations you listed can be canceled by simply moving backwards.
Like many said before you can use stow/draw weapons key to cancel actions. But netherless an extra cancel key would be nice and is something Anet should consider adding.
I dont see why pressing auto attack cant cancel an action. That would be so nice.
That topic came up several times already, often in conjunction with the engineer bundles (kits). I know it’s poor style, but for the Eternal Alchemy’s sake let me just quote myself this time.
All bundles (-> engineer kits) work differently from regular weapons in one point and for no good reason.
On weapons Stow Weapon stops ability build-up and auto-attack. On bundles we need to use Drop bundle. <Esc> works unreliably with bundles, stops auto-run + pops a menu if hit too late or twice, which easily happens with a little lag.
So simply resolve this anti-intuitive inconsistency, so that Stow Weapon stops stuff on bundles as well.
Short point: pretty please add a key-bindable action which consistently stops every other ability build-up and auto-attack. No matter if it’s a rezz, a kit, a bundle, mining, dance, weapon or utility ability.
