Annoying gathering... suggestion
Because of the difficulty in breaking off when you are gathering, if you get attacked by mobs during a long gather you could get killed before you can stop.
It’s probably more a problem with low level chars. I know my level 20ish farming char has trouble with the hyenas in Brisbane if they attack when it starts farming. I doubt they can make the animations level specific.

It works like this because gathering is a skill that your character uses, it takes a fixed amount of time and has a fixed animation to go along with it.
I’m usually really sweet… but this an internet forum and you know how it has to be.

Originally, gathering was distinct from using a skill. That turned out to cause issues (we ended up getting ruined plants|ore|wood even with the proper tools under hard-to-predict circumstances). To solve those issues, they made it work like skills.
However, if you keybind ‘stow weapon’, you can easily stop gathering more quickly (also useful for cancelling a rez).

Moving, weaponswapping, and some skills (I think) also work. I use these methods to cancel the end of the gathering animation all the time.
I just use moving. In fact, I often have the movement key(s) pressed when gathering, and my character moves as soon as the last material is collected (gets rid of that fourth strike). Ha, sometimes I must go back, if there are extras.
Yah. You can cancel the end of the gathering animation or start moving quickly if it’s already done but it’s harder to stop it when it’s just begun. If as the OP suggests the animation continues without a break when there’s more to be gathered and if your char is attacked while in a long gathering animation it will be hard to break out of it, especially for new players who don’t know all the tricks to end it.
So, while his suggestion may be ok for max level chars that can handle being attacked or vet players it can be a problem for low level chars or new players.

I don’t think the suggestion is necessary, either. As stated above by posters, it’s easy enough to either initiate or break out of.
