A warrior might be good. It’s all very hack and slash (not much reliance on creating combos). You do still need to make sure you’re able to move out of danger fairly quickly, though.
You could also look into a guardian. It’s simple to learn, and you have a lot of good group support skills and such, as well as Aegis and such to protect you on occasion.
For WvW, I’d say a tanky guardian. You can follow the zerg, and won’t die too fast, giving you time to use your skills.
I’d second ranger and guardian. With the ranger’s pet as a tank of sorts, you won’t need to do much combo’ing or chain skills to stay alive and dish out damage.

So what is an easy class which doesnt require fast reaction for chains and stuff like that (combos and stuff) ? but does well in sPvP/WvW/PvE ?
For spvp turret engi. You don’t have to press many buttons, but it still require skill. You need to use dodges right and make corret placement of turrets.
For wvw zerging: warrior or guardian. You can play with more armor and more defensive if you feel you need to. Try full pvt shout guardian/war with melandru.
For wvw roaming: you can’t really do much roaming if you have slow reflexes. Try to stay with a medium-large group.
For pve: warrior. Your utilities are only banners that you drop or signets that you never activate. Only 1 button for profession skill (F1) that you also never uses in pve. Basically you just drops banners and use weapon skills +dodge.
I guess overall your best choice is make a warrior as main character and for spvp use an engi.
I would suggest ranger.
These classes and builds are super easy-mode and anyone can play them without much effort, so this would be perfect for disabled players like you:
For PvE:
- Banners Warrior
For PvP:
- Turret Engineer
- Shoutbow Warrior
- Condition Survival Ranger
- S/T A/D Condition Ranger (never played this but it kicks butt and seems rather straight-forward and easy to play)
For WvW zerging:
- Staff/Hammer Frontline Guardian
- Shout Frontline Warrior
For WvW roaming:
- P/D Condi Thief
- P/P Perplex Condi Thief
For WvW, a Pew Pew Ranger is also easy as hell to play but only if you play like a coward and stick close to one of your towers or keeps so you have a place to run away to if you can’t burst the enemy player down before he reaches you (like most rangers do).

I kid ye not, ranger is simply the easiest class to play here. Longbow and Piercing Shot trait is massively powerful, you and your pet can stack 22 vulnerability alone on a target with Longbow and Opening Shot traits. You can enable permanent speed boost which helps with escape and gives an aid in jumping puzzles, plus signets for extra toughness and condition removal.
You even get a pet that can solo most ambient creatures, or at least can tank while you get away. I knew a girl with serious CP, only use of one arm, and she played Ranger fine.
What’s not to love?
I have no idea what disability you have, or how dedicated you are to gaming, but I knew an amputee who played and found a gaming mouse to really help. Means you pretty much only need one hand and can bind all the buttons to mouse buttons. I’ve got one of these, and I really love it.

Also engi all the way. Spamming grenades in WvW or turrets in spvp. Lotta fun, but expect some hate.
I think as long as you accept you’ll not being playing in high end tournaments and avoid (the nastier of) speed runs you can probably get any class to work for you fairly well if reaction time is the main problem.
In many cases AI based builds can help a lot as a crutch (minionmancer, ranger, etc) but I wouldn’t go that way unless you find that you really need it.
Can you tell us the nature of your disability? My son only has 1 hand and doesn’t have any major problems playing any class.
