Crafting -- Is there a point?
Crafting is the only way to acquire Ascended armor and weapons in a reliable fashion, as well as some unique account bound consumables. Some skins, such as Mawdrey, are also obtainable only through crafting as it requires account bound craftables in the process. Depending on your crafting profession and your willingness to do research every day, it can also be a source of profit.
I would advise slowly leveling all your crafts. ANet every so often releases account-bound back items or weapon skins that you cannot get any other way. They may well release one that you like. For me it was the Ambrite weapons. I also crafted various back items, and Mawdrey. So even when you’re not interested in ascended armor, it’s nice to have the option.

How do you make a profit? Ingredients are usually more expensive than the results, so value seems to go down.
As I said, you’ll need to do research. In general though, any recipes with time-gated components tend to be profitable; there’s no shortage of players willing to pay extra money to get their shiny NOW rather than later.
It depend on you it it worth it or not.
- Making profit : It need a bit of research, planning, and playing with the TP. A lot of ppl don’t like that so, not everybody want to do it. But it can be really easy, when Anet release a new time-gated recipe for a new item, you will make a good profit during the first few weeks.
- Achievement points : If you go after that or you are just a completionist.
- Legendary : You need 2 crafting profession to make a Legendary.
- Ascended gear : You will need crafting profession to make armor and weapons. You can drop them, but it’s not at all reliable. You can drop the wrong stats and you probably never drop a complete set.
- Food : Food is usually sold and bought rather quickly (some food at least). If you want to use some higher end food, it will be cheaper to craft them, especially if you use them on a regular basis.
Those are the main reasons to complete your crafting. If none of those attract you, selling your materials could be a good thing for you. But keep in mind that if you play for a longer time, some of these goals could before important for you.
Also, if you like back pieces(Mad Memories/Maudry), then you’ll need some crafting profession(s) at a certain level for them. As well as the reasons other posters stated.

Certain skins are now needed because of the collection achieves and the wardrobe collectors as a whole, you’ll make a profit with even lower level gear.
If its the nicer skins like masquerade, winged, and feathered in talor, or gladiator, and barbaric, armor in armormsith, or even the Bandit, Dredge, Ogre Krait and Pearl sets in all the weapon making sets, they will turn nice profits!
Along with rarer sets like, beaded, primordial and corrupted in all weapon crafts which will net upwards 30-70 gold a piece of you have everything needed to make one (without buying the materials of course).

Your 6 jewelry/accessory slots are covered without crafting, consumables are plentiful in the TP. There are a few odd crafted consumables that might be account bound but the only one I can think of is the twisted portal.
From a technical standpoint, legendary weapons are sellable and ascended armor drops, but neither is really a reliable source for most so these are the only two things that crafting gets you in terms of gameplay.
Theres achievements and the like, skins, and the pure enjoyment some people find in it, but it isn’t necessary or even strongly encouraged if you are good with exotic gear. My son does no crafting at all on his toons and doesn’t want for anything. He does dabble in the forge occasionally for mystic kits and upgraded siege, but that’s a little different.
