Doubt about Norn profession
Norn are Hunters, if you really want lore-connected then Ranger would be the choice, of what you listed.
Norn NPCs in GW1 Tended to be Warrior or Bow users, save the very occasional Shaman type.
That being said, Norn are a race consisting of many individuals, and while their culture is hunter/shaman based, individual characters might not be. It is entirely possible to play a Norn character of any other profession and remain within the lore – just be creative! Ranger and warrior are the obvious, but also the more boring choices.
Elementalist: not too far-fetched for somebody whose natural element is ice and snow
Necro: not too far-fetched for somebody who is in touch with the spirit world
Guardian: like a warrior, but more in touch with the spirit world
I think Norn thieves, mesmers and engineers are rare, but like any other society you really need people of all professions.

While there are no profession-races limits, ranger is the most apropiate lorewise for norn, IMHO, probably followed by warrior. Elementalist, Norn honor the spirits, not the elements themselves, so I don’t see it as a very norn like profession. Thief, well, I normally associate thieves with being nimble and preferring to attack from behind or from the shadows, and I don’t see Norn being either of those, specially the attacking from behind. A norn would usually prefer to attack face to face, most likely after threatening and yelling at its foe.
Of course, that comes from the guy that has a very flamboyantly dressed male norn mesmer..
For what’s it’s worth, in the novels there have been two norns featured are Eirn Stegalkin, who is a hunter, and Gullik Oddson, a warrior.
These are the professions linked to the races in the novels so far:
Human: Guardian (Logan Thackeray), Warrior (Riona seems to be a warrior, even if it’s not specified).
Charr: Warrior (Rytlock Brimstone, other charr like Ember Doomforge weren’t specified but seemed to be warriors as well).
Sylvari: Thief (Caithe) and Necromancer (Killeen and Trehearne in the game).
Asura: Elementalist (Zojja) and Engineer (Krannx).
Norn: Ranger (Eir Stegalkin) and Warrior (Gullik Oddson).
wrapped up in some crazy ritualist hoo-ha from Cantha.
A real grab bag of ‘you can’t hurt me. They’re called Guardians.

Also Norn Rangers are powerfull? And is it easy to lvl up as ranger?
As far as PvE goes (haven’t dabbled much outside of that) the classes are pretty balanced. They’re all more than capable of holding their own and being devastating in the right hands.
I think the general opinion though is that Warrior, Guardian and Ranger don’t have quite as steep of a learning curve as the others if you’re trying to get a grasp on the game mechanics.

What do you mean by warrior, guardian and ranger haven’t a steed of learning?
Anyone that plays or has played as ranger can tell me if it’s very good at pve and easy to level up?
About thiefs what are the most appropriate races for it?
One thing you might want to be aware of about the Norn, play-wise. They cover ground as quickly as other races, but because they have longer legs, their run “looks” slow. The only work-around I’ve found for this is to have my Norn be a class that can have a permanent speed boost (Ranger, Necro, Thief or Ele). With the boost, it “looks” like I’m running at a normal speed.
This may not bother you, but it sure bothers me. I deleted a level 72 Norn Guardian because of it. As with all opinions, ommv.
Oh, by that I mean that those three professions are easy to learn. Sorry if that wasn’t too clear!
Thieves can probably fit in anywhere really. I seem to recall each race having background questions that could be associated with a stealthy rogue-like character.

Personally I think charr and humans are the most “natural” races for a thief. Charr because they have an entire legion (Ash) dedicated to the use of stealth and subtle tactics which is pretty much what thieves do and humans because they have a large number of bandits. Or you could make an Asian looking human character and claim they’re descended from a line of Canthan assassins (because the thief is based on GW1’s Assassin profession).
But like other people have said any race can be any profession. From a gameplay/mechanics perspective it really doesn’t matter. Occasionally you’ll come across a racial skill that’s more useful for a particular profession because it fills a gap or has some synergy with their existing skills, but generally your race doesn’t make enough of a difference to matter.
From a lore perspective it can take a bit more imagination, but again any combination can be done. For example I have a norn engineer and (in brief) her story is that she was going to be a crafter, an Artificer specifically, but she wanted to explore. One day she got talking to some charr, learned about engineers and decided it was perfect for her.
Personally I think sylvari are the easiest to match to any profession. They’re naturally curious so it’s not at all hard to believe that at least a few would want to try anything they’ve heard of other races doing.

Races here are very “balanced” meaning that they really don’t have much of a difference at all between each other…there are a couple of skills that are different but not many people actually use them, they are situational at best…
Difference seems purely cosmetic… just what you want your character to look like… and I guess there is an achievement for getting x number of cultural armors, which you can’t get by playing just one race…

Thief is best at human size or smaller, an exellent class and probably 4th most wanted class in dungeons (behind warrior, mesmer and guardian). The problem with larger races is they are at a disadvantage on complex terrain, especially jumping puzzles. When I want to do a JP with a bit of added challenge I pull out my norn warrior or charr guard. It’s so much more challenging… not that that’s a good point. My human thief zips everywhere flawlessly.
Both ranger and thief have faster run speed. BUT imo ranger is too broken (especially pet), I really hate the class, more than in any other game with clkittening. I usually prefer ranger/hunter in most games, far from it here, and some don’t even relish the thought of having one in their group. I rolled one, leveled to mid-lvl, then deleted it.
For norn, heavy armor class is excellent because of their size. Since they are big, they are far easier to follow in MOB pile-ups heh. So like when fighting a meta boss with 30 mobs piled up in there along with other players, you can at least see which way your towering norn is pointed. Charr too but they slouch a bit.
This could also be problematic for a small thief, if the thief is melee (as mine is), but if wielding daggers I can hit weapon skill 2 to realign then watch to make sure auto-attack is cycling thru.
