Could someone help me estimate the differences that will be seen using a set of 6 ruby vs beryl orbs, especially the difference seen in attack, crit chance/damage, and health. I appreciate any assistance!

Power (attack) will be the same at +20 per orb. Crit damage is also the same at +2% per orb.
The only difference is +14 Precision (Ruby) vs +14 Vitality (Beryl). A full set is +14x6 = 84.

This is 840 health if Beryl is used.
At max level, based on http://wiki.guildwars2.com/wiki/Precision , this is around a +4% Crit chance if Ruby is used.

I’d go with the crit chance, personally, and eat omnomberry pies or ghosts. 66% chance on critical to steal health, and no cooldown.

Yes, well worth it, even if you just get the next-to-best food due to cost.
