Is there a way to buy a X number of items from a NPC instead of only one unit per “buy” confirmation?

Nope, you can’t buy one stack at a time since apparently adding this simple feature would break the class balance in PvP, destroy the WvW as a concept and make the LS buggy as hell and totally unplayable.

Dont think so. Some NPC sell both single items and several items per ’’buy’’ confirmation.
For example obsidian chards at temple of Balthazar. 1 or 10.

Pretty much any item, salvage kits, potions, (…), any karma, gold, badge stuff.
