So I know that if you bought HoT you would get a boost to lvl 80. I see that when you buy PoF you also get that boost.

But if I buy the expansions at this time, how many lvl80 boost do I get, 1 or 2?

I would guess two, as buying them in a bundle vs. separately should have no consequences (other than saving some money).

A shame really here I thought they would be like the level up scrolls and we would get another free shared slot

You still get another free Shared Inventory Slot; it’s just that with the second one, if you’ve yet to use the first one, they stack.

ooh good news looks like we can expect more shared slots in the future.
