Profession Troubles

I’ve been playing for about a month now, and just can’t settle on a profession I really want to level, pvp/wvw/dungeon, and just generally be a total completionist on (which is what I usually do once I hit endgame on my chosen class in a game—do everything I can).

My first few weeks playing, I got a guardian to 48, and I guess just got bored. Then I powered through leveling an Elementalist to 80 when I had a couple days off work, and after some dungeons and WvW, find I just don’t really enjoy it. Since then, I’ve made many characters that haven’t gotten past 20—Ranger, Mesmer, and Thief.

I just… can’t decide what is worth taking to 80 and further. I’m starting to stray away from melee, seeing how dungeons punish the ones who aren’t at the top of their game avoiding the bad, despite how much I used to love shield-and-hammer type tanky classes in other games.
Plus I don’t think I could play melee very well in wvw, since anytime there is a zerg around most of the players don’t even load before I’m dead. Ranger was fun until I realized how much micromanagement it’d take to keep a pet alive and useful. Thief was interesting, though seems very quick to die, until I made the mistake of reading the forums. I guess I kinda lose interest in playing a class everyone calls OP.

Anyways I guess the question is… how did you pick your favorite/main profession? Why? And do you have any tips for someone who has run out of character slots to try new professions and feels bad deleting characters constantly to try and retry?
