I’m running the 2.6 GHz i7 with 8GB RAM, on OS X 10.8.2. You should be all set to play.
If you already have Guild Wars 2 installed on a Boot Camp partition, you can copy your data files over from there and save a big chunk of your bandwidth.

I’m on an MacBook Pro Retina, and I get a constant 40-45fps even in combat.
Here are my settings. See how these work for you.
Resolution: 1440×900 (fullscreen)
Refresh Rate: Default
Frame Limiter: Unlimited
Animation: High
Anti-Aliasing: FXAA
Environment: High
LOD Distance: Medium
Reflections: All
Textures: Medium
Render Sampling: Native
Shadows: Ultra
Shaders: High
Post-Processing: High
Best Texture Filtering: On
Depth Blur: On
Vertical Sync: Off

I second Ceribis’s suggestion. I’ve got my secondary bindings set up to Shift-1 through Shift-4. Honestly, given that most Mac users aren’t going to want to change the behavior of their function keys, I think this would be a sensible default to include in the client.

You saved me a lot of frustration!
I just hit this, too. Once you drag the map to the top right corner, you can’t drag it back down. It’s very frustrating.
