When it comes to graphics cards, go with what you can afford, be it nVidia or AMD, both have their pros and cons, you’re wanting to run in a 3-monitor setup, which will reduce performance no matter which gpu maker you get.
As for the PSU, ensure that it is an 80 Plus model, I went for a Corsair TX750 80 Plus for my new rig and an nVidia GTX 660 OC, Direct CU w/2Gb GDDR5. My cooler is an Arctic Extreme Rev.2 and my choice of cpu is an Intel i5 ‘ivybridge’ quad-core cpu at 3.80Ghz. Ram is Corsair 2×4Gb Vengeance at 1600Mhz..

I have started to experience a similar issue and only after upgrading my ram from 4GB (3.99) to 12GB (11.99).
The only difference from above is that GW2 will only run for a short period of time before causing Windows 7 64 to restart and BSOD with the message about some kind of hardware issue.
Everything else is fine with my new ram chips, just GW2 doesn’t seem to like them.
EDIT: Removed new ram chips for refund.

I am so sorry to read this, yet I can empathize with your situation. I cannot play the Mac Beta of GW2 due to poor performance, however I also run Windows 7 64 Pro on the same hardware and have a lot fewer problems using bootcamp on a Mac Pro tower, although large gathering of players for an event, aka zergs causes me problems that you describe.
Perhaps you should do what I am in the process of and that is building my own pc to play games on and yes I will be ‘transplanting’ Windows off my Mac to the newer pc.
Do keep hold of your copy of GW2, just in case things turn around for you.

Managed to login as far as character selection screen and no further. Noted that the instead of account name as seen to the left, my email address was showing instead.
Am still unable to login, same error as reported by others. UK based playing on US based server, Stormbluff Isle.
I did have at one point the transaction in progress message, however the client has returned to previous failure.
Same issue, EU/UK based playing on US server, Stormbluff Isle. Both Windows & Mac clients fail to login. Had issue even logging into this forum to add a reply.

The difficulty with this skill challenge is that one of the brood is stuck in the wall of the small building set in the center of the area where the skill challenge is located.
Tip: Use AoE weapons / skills to complete this skill challenge.
I am now having this issue when trying to login and play GW2.
Cannot login, check router, firewall settings etc message window. Ridiculous as I have also been playing for a number of weeks without hindrance.
This issue has, however occurred before.

I have just noticed that since yesterday’s major patch I am missing some achievement points.
I was on 2010 points prior to patch and now I’m on 1,872.
Also I have heard that some other players have had this happen to them and also that no one seems to know why?
Found it by using the Windows logo.
Am using a Steelseries 6Gv2 keyboard as I also bootcamp run Win 7 64.
How do I minimize GW2 to desktop in the Mac Beta?
This is important to be able to look up game details and view links without having to quit GW2 first.
No problems running the GW2 Mac Beta, save for already known issues.

Give it a try if you can, your nVidia GeForce card is above minimum.
As for FPS, its a mixed bag – I am running GW2 Mac Beta on a Mac Pro Early 2008 without any major issues and in some regards better than in Win 7 Pro 64.
